Windmühlenmesser-Manufactur Robert Herder GmbH & Co. KG

In collaboration with Edwin Vinke, head chef and owner of the Michelin-starred restaurant “De Kromme Watergang” in the Netherlands, the renowned German knifemaker Robert Herder GmbH developed the highly functional SeaKnives. Their cutting ability, long-lasting cutting edge and ergonomics are matched to the processing and preparation of the types of fish that are common in Europe. The blades are made of 1.4037-grade steel with high carbon and high chromium content, to enable an extraordinary hardness of approx. 57 HRC and an exceptional toughness. The cutting geometry is designed to withstand high stress and to make the hard work of filleting fish, even with bone contact, more manageable.
